Cut the low fat feta cheese (<5% fat) into small cubes. If you can't find a feta that is low enough in fat, try experimenting with low fat curd cheese or low fat cottage cheese (the later will not form cubes though :))
Chop the tomatoes.
Mix the cheese, tomatoes and leaves in a bowl and sprinkle over with the lemon juice.
Ideally dairy products should be 0% fat, but up to 2% is allowed as long as it has no added sugar.
Dairy should also be kept down to a total of 1kg per day.
