Cut all the veg into thin strips
Put all the ingredients in a pot with the stock and cook until vegtables are cooked to your liking .(slightly al dente is best)
Add the chicken and the herbs (keep some chives for the egg pancakes) and salt and pepper
Mix the egg, egg white, oatbran and chives in a bowl and add use pepper if desired.
In a non stick pan (or wiped with oil) add the egg mixture in small batches to get very thin omelettes...once finished roll them up and cut into long strips the size of noodles and add to the piping hot soup.
