Ingredients

 Baking powder2 teaspoons
 Eggs1
 Goji Berries1 heaped tablespoon
 Greek yogurt (fat free)1 heaped or 2 level tablespoons
 Oat bran1 cup
 Sweetener1 1/2 tablespoons

Instructions

Preheat oven to 180C. Line 2 baking trays with silicon baking paper.

Combine oats, sweetener, baking powder and Goji berries in bowl. Add egg and yoghurt and stir thoroughly.

Spoon large teaspoonfuls onto trays. Flatten slightly and bake for 15 mins.

Turn trays around. Bake for further 10 - 15 mins.

The longer they are in the oven, the harder they will become.

Allow to cool on trays.

Store in air-tight container.

Alternative: Omit Goji berries. Use powdered ginger or cinnamon to taste.
