Finely slice the carrot, cabbage, onion, pepper and mushrooms.
Drain the shirataki noodles and rinse for about 2 minutes. Then in a bowl cover them in a good covering of the soya sauce and set aside.
Give a wok a spay of olive oil and then start to stir-fry the onion and garlic. After a couple of minutes add the rest of the prepared veg.
In a separate frying pan add the noodles in soya sauce and dry fry for about 4 minutes or until they start to make a squeaky sound in the pan.
Add the cooked noodles and king prawns to the stir-fried veg and continue to heat, stirring all the time to avoid sticking, for a further few minutes or until the prawns are heated through well.
Add more soya sauce if required and season with pepper.
7. Serve and enjoy whilst hot- No one would no that the noodles were not glass noodles :) obviously this dish could be done with chicken or beef if prefered.
