Cook a 1/2 lb hamburger & drain well, pat with a paper towel to get the fat out, set aside.
Dice 1/2 cup of onion (I used about 1/3 of a big yellow onion), 1/4 cup celery tops (I had leftover so that's what I used here), and the garlic.
Prepare beeth broth from the stock.
In the mean time spray large fry pan with PAM, saute' onions and garlic about 5 mins.
Add the can of tomatoes (keep the fresh ones aside).
Add celery tops and fresh tomato pieces.
Add Spaghetti Spice, followed by the beef broth and Beef Gelatin (or cornstarch).
As this heats up, rinse and then dry fry the noodles. (if you never heard of "NO oodles", search for them, they are great. Another brand is called Miracle Noodles. No cooking required, but RINSE them very very well under water. Some pat them dry with paper towels, I like to dry fry mine to get the moisture out. Wasy, just throw them on a cast iron pan and toss them around for a couple of minutes. They won't brown, but they will dry off nicely. Then right into my dish to take on all those great flavors from the sauce).
Once they are done and the sauce is coming up to boiling, add noodles to sauce. Simmer for 15 minutes.
Add the fresh cherry tomato halves and simmer another 15 minutes or so, stirring from time to time.
After plating, garnish with fat free Parm Cheese (optional) and chopped chives (or green onion tops). Serve with a spinach salad with diced tomatoes, mushrooms, and a creamy salad dressing. VERY GOOD!
Ideally dairy products should be 0% fat, but up to 2% is allowed as long as it has no added sugar.
