Separate the eggs and beat whites until stiff.
Beat yolks with the Splenda and add fat free buttermilk, vanilla, spice and bicarb.
Stir in the bran and grated carrot then lightly fold in the egg whites.
Pour mixture into a greased and lined loaf tin.
Bake at 160C (fan oven) for 45minutes.
You can substitute 0%Fat Yoghurt if you can't get fat free Buttermilk.
A tangy filling or topping can be made if you like using Quark mixed with lemon juice and zest and sweetened to taste with Splenda.
