Heat your oven to 160c/320F/Gas Mark 3.
Use a microwave to thaw your spinach, then squeeze it out to remove as much water as possible.
Mix together the ricotta or cottage cheese, eggs, spinach, nutmeg, basil, and salt and pepper in a bowl to combine.
Lightly spray an oven-proof dish with cooking oil, then pour your spinach mixture in and spread it out until it’s even.
Top with cherry tomatoes cut in half (cut side up), and sprinkle crumbled feta amongst the tomatoes, then add a grind of black pepper.
Place in the oven and cook for 40 minutes or till well set.
For the last five minutes of cooking time place the dish under a grill to nicely brown the cheese and tomatoes.
Serve warm or cold – it’s lovely either way!
