Ingredients

 Bell peppers1
 Cherry Tomatos1-2 handfufs
 Cucumber1/2 of a big one
 Lemon juice1 tbsp
 Salt & Pepperto taste

Instructions

Take half of a big cucumber, peel and wash.

Slice up the cucumber, I like to have smaller pieces so I cut up the slices into halves or even quarters.

De-seed the bell pepper and cut into small thin stripes. I like to use orange or yellow ones for this salad as it makes a nice colour mix.

Take 1-2 handfuls of cherry tomatoes and cut in halves or even quarters.

Put all the veggies into a bowl and mix.

Add salt & pepper as well as the lemon juice and mix again.
