Ingredients

 Carrots1 cup, grated
 Coconut extract1/2 tsp.
 Flaked Light Tuna2 cans, 85g each, Spicy Thai Chili
 Non-fat evaporated milk1 cup
 Shirataki noodles1 cup
 Snow peas1 cup, sliced julienne (set some aside for garnish)

Instructions

Prepare shirataki noodles as directed on package.

In a large sauté pan, add the tuna, sliced snow peas (optional - from Consolidation), grated carrots and stir together over high heat.

Stir coconut extract into evaporated milk, then stir into tuna mix in saute pan.

Toss noodles with tuna sauce in the pan. Heat a few minutes longer until sauce thickens a little.
