Combine egg, oat bran and natural yoghurt in a bowl. Mix together and add a little salt and pepper as desired.
Pour the mixture into 2 equally sized portions onto a non-stick pan heated to a low flame. Allow to cook until bubbled form on the top surface and they begin to look dry, then flip over and cook for no more than one minute. Place cakes on a plate.
On a plate, lay out 2 pieces of smoked salmon and drizzle with 1 half of a lemon. Roll up the slices and place onto the oat bran cakes.
Sprinkle capers over the salmon and add the tablespoon or so of cottage cheese onto the side of the dish.
Drizzle with extra lemon if desired. Enjoy!
Adjust the servings from the recipe to match the oat bran requirements of your phase!
